My husband wanted me to make chicken salad so he could have sandwiches on the weekend. While he was eating sandwiches, I was enjoying a salad…
On a bed of spinach, I arranged a tomato sliced into spikes, a scoop of chicken salad and scattered some onion… It looked pretty good, but I just couldn’t help myself… I just HAVE TO PLAY WITH MY FOOD…

ReplyDelete@Linda: Yes, I did made it myself. In this case, I had some left over boneless breast meat. I sliced it fine and then across in very small pieces. It wasn't quite enough, so I opened a can of chicken white meat. To the chicken, I added chopped celery and onion. Then mayonnaise, salt & pepper to taste. That's all there is to chicken salad. Regarding the canned chicken white meat...I always drain off the broth into a freezer container because the broth is excellent to add to homemade chicken soup. I don't waste much...LOL.
