An original dish created in Darlene’s Kitchen…By Darlene
2 bunches of cilantro, chopped
1 jalapeno pepper, thinly sliced
Thinly sliced sweet onion
1-2 firm plum tomatoes, diced
1 small package salad shrimp – thawed, rinsed and drained
1 small package artificial crabmeat, diced
Season with salt, pepper and cumin to taste
Juice of one lemon
Drizzle with extra virgin olive oil
Toss well. It is good first day, but I prefer it the second day. The cilantro is wilted a bit the second day (this pic is day 2), but the flavor is great!
Nice cool salad to eat alone or as side dish in a meal.
That's really pretty! I'd have to substitute something for the cilantro, though. Not a fan.
ReplyDeleteIt's funny you said that because I used to HATE cilantro. It tasted like dish detergent to me! But, there was a seafood salad that I liked but it had cilantro in it. I went to a lot of trouble picking it away from the rest of the salad. I did that for a very long time. Then I began to like it...then to love it. The salad was very much like this one, except mine does not have octopus... LOL

ReplyDeleteWe grew cilantro for the first time this summer-- I love the smell of cilantro--and like it in limited quantities. The salad looks really good!! Cheers, Jenn
ReplyDeleteThat's a good idea. Maybe I'll plant some in the spring. I was thinking just yesterday that I want to plant some herbs next year. It would be easy to grow some cilantro along side the herbs.
